Instructions
Prepare the graham cracker crust by combining graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of mini springform pans or muffin liners.
Make the cheesecake filling by beating together cream cheese, granulated sugar, sour cream, eggs, vanilla extract, and cinnamon until smooth. Pour over the crust.
Create the apple crisp topping by combining apples, all-purpose flour, rolled oats, brown sugar, butter, cinnamon, and nutmeg. Crumble over the cheesecake filling.
Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheesecake is set and the topping is golden brown.
Allow to cool completely in the oven with the door slightly ajar. Chill for at least 4 hours or overnight before serving.
