Peel, core, and dice the apples into small, uniform pieces. Toss with lemon juice.
In a large skillet, melt the butter over medium heat. Add the diced apples, granulated sugar, brown sugar, flour, cinnamon, and nutmeg. Cook, stirring occasionally, until the apples are tender and the mixture has thickened, about 8-10 minutes. Remove from heat and let cool slightly.
Warm tortillas slightly (optional).
Spoon about 2-3 tablespoons of the apple pie filling into the center of each tortilla. Gently fold in half.
Heat about ¼ inch of vegetable oil in a large skillet over medium heat.
Carefully place the assembled tacos in the hot oil. Cook for 2-3 minutes per side, or until golden brown and crispy.
Remove from skillet and place on a paper towel-lined plate to drain excess oil.
Preheat your air fryer to 375°F (190°C).
Place the assembled tacos in the air fryer basket, making sure they are not touching. Cook for 5-7 minutes, or until golden brown and crispy, flipping halfway through.
While still warm, brush the tacos with melted butter and sprinkle generously with cinnamon sugar.
Add your favorite toppings, such as whipped cream, caramel sauce, or chopped nuts. Serve immediately.
