  • 1 pound potato gnocchi
  • 8 ounces thick-cut bacon
  • 8 ounces sharp cheddar cheese, shredded
  • 6 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes

Instructions

  • Cook the bacon in a large pot or Dutch oven over medium heat until crispy. Remove the bacon and set aside, reserving the bacon fat in the pot.
  • Add the diced onion, carrots, and celery to the pot and sauté in the bacon fat until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Sprinkle the flour over the vegetables and cook for 1 minute, stirring constantly to create a roux.
  • Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the pot. Bring to a simmer.
  • Add the dried thyme, salt, pepper, and red pepper flakes. Simmer for 10 minutes to allow the flavors to meld.
  • Add the gnocchi and cook until they float to the top and are tender, about 3-5 minutes.
  • Reduce the heat to low and stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is smooth. Do not boil.
  • Crumble the cooked bacon and stir some of it into the soup. Reserve some for garnish.
