Ingredients

  • Ripe Bananas
  • All-Purpose Flour
  • Sugar
  • Eggs
  • Oil
  • Baking Soda
  • Salt
  • Cinnamon
  • Nutmeg
  • Vanilla Extract

Instructions

  • Preheat oven to 375°F (190°C).
  • Mash ripe bananas in a bowl.
  • In a separate bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  • Add mashed bananas, eggs, oil, and vanilla extract to the dry ingredients. Mix until just combined.
  • Fill muffin cups 2/3 full.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
