  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 large egg, beaten
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and pepper to taste
  • Vegetable or canola oil, for deep frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1-2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • Instructions

  • Cut the chicken into bite-sized pieces.
  • Marinate the chicken in buttermilk for at least 30 minutes.
  • In a bowl, whisk together the egg, cornstarch, flour, garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and pepper.
  • Heat vegetable or canola oil in a deep fryer or large pot to 350°F (175°C).
  • Dip each piece of chicken in the egg mixture, ensuring it's fully coated.
  • Fry the chicken in batches for 3-5 minutes per batch, or until golden brown and cooked through. Don't overcrowd the pot.
  • Remove the chicken from the oil and place it on a wire rack to drain excess oil.
  • In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar.
  • Add the fried chicken to the sauce and toss to coat evenly.
  • Garnish with sesame seeds and chopped green onions.
  • Serve immediately over rice or noodles.
