  • 1/3 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup all-purpose flour for topping
  • 1 cup chopped pecans for topping
  • 1/3 cup melted butter for topping
  • 1 cup brown sugar for topping

Instructions

  • Preheat your oven to 350°F (175°C). Peel and cube the sweet potatoes, then boil them in salted water until tender, approximately 15-20 minutes.
  • Drain and mash the potatoes, then incorporate melted butter, brown sugar, milk, eggs, vanilla, cinnamon, and salt until smooth. Spread the mixture into a greased 9×13 inch baking dish.
  • In a separate bowl, combine flour, chopped pecans, melted butter, and brown sugar. The mixture should resemble wet sand.
  • Sprinkle the pecan topping over the sweet potatoes. Bake in your preheated oven for 30 minutes or until golden and a bit bubbly around the edges.
