Ingredients

  • All-Purpose Flour
  • Granulated Sugar
  • Cold Unsalted Butter
  • Salt
  • Fresh Blueberries
  • Lemon Juice
  • Lemon Zest
  • Cornstarch

Instructions

  • Prepare the Crust: In a large bowl, whisk together the flour, sugar, and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  • Form the Dough: Gradually add cold water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix!
  • Press the Crust: Divide the dough in half. Press one half evenly into the bottom of an ungreased 9×13 inch baking pan.
  • Prepare the Filling: In a separate bowl, gently combine the blueberries, sugar, lemon juice, lemon zest, and cornstarch.
  • Assemble and Bake: Pour the blueberry filling over the crust in the pan. Crumble the remaining dough over the top of the filling.
  • Bake: Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  • Cool and Cut: Let the bars cool completely in the pan before cutting into squares. This allows the filling to set properly.
