  • 1 box (15.25 oz) cake mix
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • As many as your heart desires sprinkles
  • Powdered Sugar for rolling (optional)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine the cake mix, vegetable oil, eggs, vanilla extract, and baking powder.
  • Mix until just combined. Do not overmix.
  • If the dough is too sticky, chill it in the refrigerator for 30 minutes.
  • Roll the dough into 1-inch balls and roll in powdered sugar if desired.
  • Place the dough balls on a baking sheet lined with parchment paper.
  • Gently press sprinkles into the top of each cookie.
  • Bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft.
  • Let the cookies cool completely on the baking sheet before transferring them to a wire rack.
  • Store in an airtight container at room temperature for up to 5 days.
