Cake Mix Cookie Bars: Quick, chocolate chip treat.

Ingredients

Scale
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup all-purpose flour
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 1/4 cup mini chocolate chips
  • 1/2 cup semi-sweet chocolate chips (for drizzle)
  • 1/4 cup heavy cream
  • 1 tablespoon light corn syrup
  • 1 tablespoon unsalted butter (for drizzle)
  • 1/2 teaspoon vanilla extract (for drizzle)
  • Pinch of salt (for drizzle)

Instructions

  • Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy lifting.
  • In a large mixing bowl, combine the yellow cake mix, all-purpose flour, light brown sugar, granulated sugar, baking powder, and a pinch of salt. Whisk until thoroughly combined.
  • Add the softened unsalted butter, eggs, and pure vanilla extract to the bowl. Mix with an electric mixer on medium-low speed or a sturdy wooden spoon until a thick, cohesive dough forms. Scrape down the sides of the bowl as needed.
  • Gently fold in the semi-sweet chocolate chips, milk chocolate chips, and mini chocolate chips until evenly distributed. Avoid overmixing.
  • Press the dough evenly into your prepared 9×13 inch baking pan. Lightly grease your hands or use wax paper to smooth the dough. Ensure the surface is flat and even.
  • Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs. Do not overbake. Remove from oven and cool completely in the pan on a wire rack.
  • While bars cool, combine semi-sweet chocolate chips (drizzle), heavy cream, light corn syrup, 1 tablespoon unsalted butter (drizzle), and a pinch of salt in a heatproof bowl. Microwave in 20-30 second intervals, stirring after each, until smooth and melted, or use a double boiler. Stir in the vanilla extract (drizzle).
  • Once bars are completely cool, lift them from the pan using the parchment paper overhang and transfer to a cutting board. Liberally drizzle the chocolate mixture over the entire surface of the bars. Allow the drizzle to set for 15-20 minutes at room temperature, or 5-10 minutes in the fridge, before slicing.
