Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon almond extract
  • 1 teaspoon orange zest
  • 1 cup candied cherries, halved
  • 2 tablespoons powdered sugar (optional glaze)
  • 1-2 tablespoons milk or lemon juice (optional glaze)

Instructions

  • Preheat oven to 350°F (175°C). In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together eggs, almond extract, and orange zest. Add the wet ingredients to the dry ingredients and mix until just combined.
  • Gently fold in the candied cherries.
  • Divide the dough in half. On a lightly floured surface, shape each half into a log about 12 inches long and 3 inches wide.
  • Place the logs on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until lightly golden brown.
  • Remove from oven and let cool for 15 minutes. Reduce oven temperature to 325°F (160°C).
  • Using a serrated knife, slice the logs into 3/4-inch thick slices. Place the slices cut-side up on the baking sheet.
  • Bake for another 15-20 minutes, or until golden brown and crisp, flipping halfway through. Let cool completely on a wire rack.
  • Optional Glaze: Whisk together powdered sugar and milk/lemon juice until smooth. Drizzle over cooled biscotti.
