- 3 pounds Sweet Potatoes
- 1/2 cup Unsalted Butter
- 3/4 cup Brown Sugar
- 1/4 cup Maple Syrup
- 1 teaspoon Cinnamon
- 1/2 teaspoon Nutmeg
- 1/4 teaspoon Ginger
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla Extract
- 1/2 cup Pecans or Walnuts (optional)
- Preheat oven to 375°F (190°C).
- Peel and cube the sweet potatoes into 1-inch pieces.
- Parboil the sweet potatoes for 5-7 minutes.
- Drain the sweet potatoes and transfer them to a baking dish.
- In a saucepan, melt the butter over medium heat. Stir in the brown sugar, maple syrup, cinnamon, nutmeg, ginger, and salt.
- Bring to a simmer and cook for 2-3 minutes, stirring constantly.
- Remove from heat and stir in the vanilla extract.
- Pour the glaze over the sweet potatoes, tossing to coat evenly.
- Bake for 30-40 minutes, or until the sweet potatoes are tender and the glaze is caramelized, basting with the glaze every 10 minutes.
- If using, sprinkle with pecans or walnuts during the last 10 minutes of baking.
- Serve warm and enjoy!
