  • 1 pound Chicken Breast
  • 1 pound Pasta
  • 1 cup Raw Cashews
  • 1 cup Vegetable Broth
  • 2 tablespoons Nutritional Yeast
  • 1 tablespoon Lemon Juice
  • 2 cloves Garlic
  • 2 tablespoons Cajun Seasoning
  • 2 tablespoons Olive Oil
  • Salt to taste
  • Pepper to taste

Instructions

  • Soak raw cashews in hot water for at least 2 hours, or preferably overnight. Drain and rinse.
  • Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
  • Cut chicken breast into bite-sized pieces and season with Cajun seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through.
  • Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
  • In a high-speed blender, combine soaked cashews, vegetable broth, nutritional yeast, and lemon juice. Blend until completely smooth and creamy.
  • Pour the cashew cream sauce into the skillet with the chicken and garlic. Bring to a simmer.
  • Add the cooked pasta to the skillet and toss to coat. Add reserved pasta water if needed to adjust the consistency of the sauce.
  • Season with salt and pepper to taste. Serve immediately.
