  • 2 lbs Russet potatoes, peeled and diced
  • 1 lb Smoked sausage, sliced
  • 1 cup Ranch dressing
  • 2 cups Shredded cheddar cheese
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • Optional: Chopped green onions, crumbled bacon, or a sprinkle of paprika

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, melt butter over medium heat. Add onion and garlic and sauté until softened, about 5 minutes.
  • In a large bowl, combine diced potatoes, sliced smoked sausage, sautéed onion and garlic, ranch dressing, and cheddar cheese. Season with salt and pepper to taste.
  • Pour the mixture into a greased 9×13 inch baking dish.
  • Bake for 45 minutes, or until potatoes are tender and cheese is melted and bubbly.
  • Optional: Broil for a minute or two for extra browning, keeping a close eye to prevent burning.
  • Let it rest for a few minutes before serving. Garnish with chopped green onions, crumbled bacon, or a sprinkle of paprika, if desired.
