  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt

Instructions

  • Preheat oven to 375°F (190°C).
  • Mash the ripe bananas in a large bowl.
  • Add the softened butter, brown sugar, and granulated sugar to the mashed bananas. Cream together until light and fluffy.
  • Beat in the egg and vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, rolled oats, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Stir in any optional add-ins, such as chocolate chips, walnuts, raisins, or shredded coconut.
  • Drop rounded tablespoons of dough onto ungreased baking sheets, leaving some space between each cookie.
  • Bake for 10-12 minutes, or until the edges are lightly golden brown.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
