  • 1.5 lbs boneless, skinless chicken breasts, sliced
  • 1 lb cremini mushrooms, sliced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup full-fat sour cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  • Season the sliced chicken breasts with salt and pepper.
  • In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat. Sear the chicken in batches, being careful not to overcrowd the pan, until golden brown and cooked through. Set aside.
  • Add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil to the skillet. Add the sliced mushrooms and cook until softened and browned, about 5-7 minutes. Set aside.
  • Add the chopped onion to the skillet and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Sprinkle the flour over the onion and garlic mixture and cook for 1-2 minutes, stirring constantly.
  • Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook until the sauce has thickened slightly, about 5-7 minutes.
  • Remove the skillet from the heat and stir in the sour cream and Dijon mustard until smooth and creamy. Season with salt and pepper to taste.
  • Return the chicken and mushrooms to the skillet and heat through gently, being careful not to boil the sauce.
  • Stir in the fresh parsley and serve hot over egg noodles or your favorite pasta. Garnish with additional parsley, if desired.
