  • 2 cups cooked, shredded chicken (combination of breast and thigh)
  • 1/2 cup high-quality, full-fat mayonnaise
  • 1/4 cup finely diced celery
  • 2 tablespoons finely minced red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • 8 slices sturdy bread (sourdough, brioche, or white bread)

Instructions

  • If poaching chicken, bring a pot of water to a simmer. Add chicken breasts and thighs, and cook until internal temperature reaches 165°F (74°C). Let cool slightly before shredding.
  • In a large bowl, combine shredded chicken, mayonnaise, celery, red onion, parsley, tarragon, chives, lemon juice, and Dijon mustard.
  • Season with salt and pepper to taste. Mix gently until all ingredients are well combined.
  • Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Lightly toast the bread slices.
  • Spread the chicken salad evenly onto four slices of toasted bread. Top with the remaining bread slices to form sandwiches.
  • Cut the sandwiches in half and serve immediately.
