  • 2-3 Chipotle Peppers in Adobo Sauce
  • 2 cups Cooked Rice
  • 1 can Black Beans (15 ounces), rinsed and drained
  • 1 cup Corn (fresh, frozen, or canned)
  • 1/2 Red Onion, diced
  • 1/4 cup Cilantro, chopped
  • 2 tablespoons Lime Juice, fresh
  • 2 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • Salt and Pepper to taste
  • Instructions

  • Marinate the chicken breasts with chipotle peppers, adobo sauce, lime juice, cumin, chili powder, garlic powder, onion powder, salt, and pepper for at least 30 minutes.
  • Heat olive oil in a skillet over medium-high heat. Cook the chicken until fully cooked, about 6-8 minutes per side. Let rest for 5 minutes, then dice.
  • Prepare the rice according to package directions.
  • If using fresh or frozen corn, grill or roast it until lightly charred.
  • Assemble the bowls by layering rice, black beans, corn, diced chicken, red onion, and cilantro.
  • Drizzle with lime juice and add your favorite toppings.
