  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup freeze-dried strawberries, powdered
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the powdered freeze-dried strawberries, vegetable oil and chocolate chips.
  • Chill the dough for at least 30 minutes.
  • Use a cookie scoop to drop rounded tablespoons of dough onto ungreased baking sheets.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • Melt additional chocolate chips and drizzle over the cooled cookies. Sprinkle a tiny bit of sea salt on top of the melted chocolate for a gourmet touch.
