  • 125 grams of unsalted butter
  • 200 grams of top-quality cocoa powder
  • 250 grams of dark chocolate
  • 125 grams of bittersweet chocolate
  • 250 ml of heavy cream
  • 4 large eggs, separated
  • 150 grams of sugar
  • 150 grams of all-purpose flour
  • 1 pinch of salt

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper.
  • Melt unsalted butter and mix with cocoa powder until smooth.
  • Pour the mixture into the baking pan, spreading evenly to form the brownie layer.
  • Bake for 20-25 minutes or until the edges are set. Let it cool.
  • Melt the bittersweet chocolate over a double boiler. Let it cool slightly.
  • Whip egg whites to soft peaks, gradually add sugar to form stiff peaks.
  • Mix the cooled chocolate with whipped cream until smooth, then fold in the egg whites.
  • Spread chocolate mousse over the cooled brownie base.
  • Refrigerate for at least 4 hours or until the mousse is set.
  • Serve chilled with powdered sugar or chocolate drizzle.
