Chocolate Peanut Butter Cookie Cups

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup creamy peanut butter
  • 1 cup chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C). Prepare a muffin tin by lightly greasing it or lining with paper cups.
  • In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In another bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture until fully combined, forming a dough.
  • Roll the dough into small balls and place one in each muffin cup. Use your thumb to create a small well in the center.
  • Place a small dollop of peanut butter in each well.
  • Bake in preheated oven for 10-12 minutes, until the edges are set.
  • While still warm, add a few chocolate chips to each cup and let them melt. Use a spoon to spread if desired.
  • Allow to cool in the tin for about 5 minutes before transferring to a wire rack.
