250g Christmas Pudding
250ml Whole Milk
250ml Heavy Cream
100g Granulated Sugar
4 Egg Yolks
2 tbsp Dark Rum
1 tsp Mixed Spice
1 tsp Vanilla Extract
Chill the custard base in the refrigerator for at least 4 hours, or preferably overnight.
Pulse the Christmas pudding in a food processor to break it down into smaller pieces.
Churn the ice cream until it reaches a soft-serve consistency.
Transfer the ice cream to an airtight container and freeze for at least 2-3 hours to allow it to harden completely.
