  • 250ml Whole Milk
  • 250ml Heavy Cream
  • 100g Granulated Sugar
  • 4 Egg Yolks
  • 2 tbsp Dark Rum
  • 1 tsp Mixed Spice
  • 1 tsp Vanilla Extract
  • Instructions

  • Chill the custard base in the refrigerator for at least 4 hours, or preferably overnight.
  • Pulse the Christmas pudding in a food processor to break it down into smaller pieces.
  • Churn the ice cream until it reaches a soft-serve consistency.
  • Transfer the ice cream to an airtight container and freeze for at least 2-3 hours to allow it to harden completely.
