  • 1 pound of lean ground beef (90/10)
  • 3 large bell peppers (a mix of red, yellow, and green)
  • 1 medium yellow onion
  • 2 cloves of garlic
  • 2 (14.5-ounce) cans of diced tomatoes
  • 1 (15-ounce) can of tomato sauce
  • 4 cups of beef broth
  • 1 cup of cooked long-grain rice
  • 1 tablespoon of Italian seasoning
  • 1 teaspoon of smoked paprika
  • Salt to taste
  • Pepper to taste

Instructions

  • Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
  • Add the browned ground beef, chopped bell peppers, chopped onion, minced garlic, diced tomatoes (undrained), tomato sauce, beef broth, Italian seasoning, smoked paprika, salt, and pepper to a crockpot.
  • Stir to combine all ingredients.
  • Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours, or until the vegetables are tender.
  • Stir in the cooked rice during the last 30 minutes of cooking.
