  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped

  • 1 orange bell pepper, chopped
  • 1 cup cooked long-grain rice
  • 28 ounces diced tomatoes, canned
  • 15 ounces tomato sauce
  • 6 cups beef broth
  • 2 teaspoons Italian seasoning
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Optional: Red pepper flakes, to taste
  • Optional: Sour cream or Greek yogurt, for serving
  • Optional: Shredded cheddar cheese or mozzarella cheese, for serving

Instructions

  • Brown the ground beef in a large pot or Dutch oven over medium-high heat. Drain off any excess grease.
  • Add the chopped onion and garlic to the pot and sauté until softened, about 5 minutes.
  • Add the chopped bell peppers and cook for another 5 minutes, until slightly softened.
  • Stir in the diced tomatoes, tomato sauce, beef broth, Italian seasoning, and Worcestershire sauce. Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce heat and simmer for at least 30 minutes, or longer for a more flavorful soup.
  • Stir in the cooked rice during the last 10 minutes of cooking.
  • Taste and adjust the seasoning as needed. If desired, add a pinch of red pepper flakes for a spicy kick.
  • Serve hot, garnished with sour cream or Greek yogurt and shredded cheese, if desired.
