Combine shredded turkey, stuffing, and cranberry sauce in a large bowl.
Add beaten eggs and stir until well combined. Add broth or gravy if too dry, or more stuffing/breadcrumbs if too wet.
Form the mixture into 1-inch to 1.5-inch balls.
Heat oil to 350°F (175°C).
Dredge each stuffing ball in flour.
Fry for 2-3 minutes per side, until golden brown and crispy.
Drain on paper towel-lined plate.
Preheat oven to 375°F (190°C).
Line a baking sheet with parchment paper.
Dredge each stuffing ball in flour.
Arrange balls on baking sheet, spray with cooking spray. Bake for 15-20 minutes, flipping halfway through.
