  • 1 pound pasta (penne, rotini, or farfalle)
  • 1 pound Italian sausage, removed from casings
  • 1 pound chicken breast, cooked and shredded or diced
  • ½ cup buffalo wing sauce
  • ½ cup ranch dressing
  • 4 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2-3 green onions, thinly sliced, for garnish (optional)
  • Salt to taste
  • Pepper to taste
  • Blue cheese crumbles for topping (optional)

Instructions

  • Cook the pasta according to package directions until al dente. Drain and set aside.
  • While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
  • Add the minced garlic to the skillet and cook for about 1 minute, until fragrant.
  • Stir in the buffalo wing sauce, ranch dressing, cream cheese, and heavy cream. Bring to a simmer, stirring until the cream cheese is melted and the sauce is smooth.
  • Add the cooked chicken, cheddar cheese, and Monterey Jack cheese to the skillet. Stir until the cheese is melted and the sauce is creamy.
  • Add the cooked pasta to the skillet and toss to coat with the sauce. Season with salt and pepper to taste.
  • Garnish with green onions and blue cheese crumbles (if using). Serve immediately.
