  • 1.5-2 pounds boneless, skinless chicken breasts
  • 2-3 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 green onions, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  • Pound the chicken breasts to an even thickness.
  • Season the chicken breasts generously with Cajun seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 4-5 minutes per side, or until golden brown and cooked through (165°F internal temperature). Remove chicken from skillet and set aside.
  • Add butter to the skillet. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Pour in the chicken broth and deglaze the pan, scraping up any browned bits from the bottom of the skillet.
  • Stir in the heavy cream and Parmesan cheese. Bring the sauce to a simmer and let it thicken slightly, about 5-7 minutes.
  • Taste the sauce and adjust seasoning with salt and pepper as needed. Add more Cajun seasoning if you want it spicier.
  • Return the cooked chicken breasts to the skillet and coat them in the sauce. Simmer for a few more minutes to heat the chicken through.
  • Garnish with chopped green onions. Serve immediately over rice, pasta, or mashed potatoes.
