  • 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 2-4 tablespoons curry powder (adjust to taste)
  • 1 teaspoon turmeric powder
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1/2 cup chicken broth
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Instructions

  • In a large bowl, toss the chicken with curry powder, turmeric powder, salt, and pepper.
  • In a large skillet, brown the chicken in batches over medium-high heat. This step is optional but adds great flavor. Transfer the chicken to the crockpot.
  • Add the chopped onion and garlic to the skillet and cook until softened, about 5 minutes. Add the grated ginger and cook for another minute. Transfer the onion mixture to the crockpot.
  • Pour in the diced tomatoes, coconut milk, and chicken broth. Stir to combine.
  • Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours, or until the chicken is tender and easily shredded with a fork.
  • Stir in the lime juice and cilantro. Taste and adjust the seasonings as needed.
  • Serve hot over rice, quinoa, or naan bread. Garnish with extra cilantro and a dollop of yogurt or sour cream, if desired.
