1 pound Ground Italian Sausage (sweet, mild, or hot)
1/2 pound Ground Beef (optional)
1 medium Onion, chopped
4 cloves Garlic, minced
28 ounces Canned Crushed Tomatoes
15 ounces Tomato Sauce
6 ounces Tomato Paste
6 cups Chicken Broth
2 teaspoons Dried Oregano
2 teaspoons Dried Basil
1 teaspoon Italian Seasoning
Salt and Black Pepper to taste
8 ounces Lasagna Noodles, broken into small pieces
15 ounces Ricotta Cheese
1 large Egg
1/2 cup Parmesan Cheese, grated
1/4 cup Fresh Parsley, chopped
Mozzarella Cheese for topping
Instructions
Brown the Italian sausage and ground beef (if using) in a skillet over medium heat. Drain off any excess grease.
Add the browned meat, onion, and garlic to a crockpot.
Stir in the crushed tomatoes, tomato sauce, tomato paste, chicken broth, oregano, basil, Italian seasoning, salt, and pepper.
Cover and cook on low for 4-6 hours or on high for 2-3 hours.
During the last hour of cooking, add the broken lasagna noodles to the crockpot.
In a separate bowl, combine the ricotta cheese, egg, Parmesan cheese, and parsley.
Right before serving, stir the ricotta mixture into the soup.
Top with mozzarella cheese and serve immediately.
