  • 1 pound Ground Italian Sausage (sweet, mild, or hot)
  • 1/2 pound Ground Beef (optional)
  • 1 medium Onion, chopped
  • 4 cloves Garlic, minced
  • 28 ounces Canned Crushed Tomatoes
  • 15 ounces Tomato Sauce
  • 6 ounces Tomato Paste
  • 6 cups Chicken Broth
  • 2 teaspoons Dried Oregano
  • 2 teaspoons Dried Basil
  • 1 teaspoon Italian Seasoning
  • Salt and Black Pepper to taste
  • 8 ounces Lasagna Noodles, broken into small pieces
  • 15 ounces Ricotta Cheese
  • 1 large Egg
  • 1/2 cup Parmesan Cheese, grated
  • 1/4 cup Fresh Parsley, chopped
  • Mozzarella Cheese for topping

Instructions

  • Brown the Italian sausage and ground beef (if using) in a skillet over medium heat. Drain off any excess grease.
  • Add the browned meat, onion, and garlic to a crockpot.
  • Stir in the crushed tomatoes, tomato sauce, tomato paste, chicken broth, oregano, basil, Italian seasoning, salt, and pepper.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  • During the last hour of cooking, add the broken lasagna noodles to the crockpot.
  • In a separate bowl, combine the ricotta cheese, egg, Parmesan cheese, and parsley.
  • Right before serving, stir the ricotta mixture into the soup.
  • Top with mozzarella cheese and serve immediately.
