  • 1 pound Italian Sausage, removed from casings
  • 1 medium Onion, chopped
  • 4 cloves Garlic, minced
  • 6 cups Chicken Broth
  • 1 cup Heavy Cream
  • 15 ounces Ricotta Cheese
  • 2 cups Mozzarella Cheese, shredded
  • ½ cup Parmesan Cheese, grated
  • 8 ounces Lasagna Noodles, broken into pieces
  • 5 ounces Fresh Spinach
  • 2 teaspoons Italian Seasoning
  • Salt and Pepper to taste
  • 1/4 teaspoon Nutmeg

Instructions

  • Brown the Italian sausage in a skillet over medium heat, breaking it up with a spoon. Drain off any excess grease.
  • Add the browned sausage, onion, garlic, chicken broth, Italian seasoning, salt, pepper, and nutmeg to a slow cooker.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  • During the last 30-45 minutes of cooking, add the lasagna noodles. Stir to combine.
  • In the last 15 minutes of cook time, stir in the heavy cream, ricotta cheese, mozzarella cheese, and parmesan cheese. Also stir in the spinach.
  • Continue cooking until the cheeses are melted and the spinach is wilted.
  • Taste and adjust seasoning as needed. Garnish with fresh basil or parsley, if desired.
