Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
Add the browned ground beef, bell peppers, onion, garlic, diced tomatoes, tomato sauce, beef broth, cooked rice, Italian seasoning, paprika, salt, and pepper to a slow cooker.
Stir to combine all the ingredients.
Cover and cook on low for 4-6 hours or on high for 2-3 hours, or until the peppers are tender.
