  • 1.5 lbs Ground turkey
  • 28 oz can Diced tomatoes, undrained
  • 6 oz can Tomato paste
  • 15 oz can Kidney beans, drained and rinsed
  • 15 oz can Black beans, drained and rinsed
  • 1 cup Corn, frozen or canned (drained)
  • 1 large Onion, chopped
  • 1 Bell Pepper, chopped (any color)
  • 3 cloves Garlic, minced
  • 2 tablespoons Chili powder
  • 1 tablespoon Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Oregano, dried
  • 1/4 teaspoon Cayenne pepper (or more, to taste)
  • Salt and Pepper to taste
  • 1 tablespoon Olive Oil
  • Shredded cheese (optional)
  • Sour cream (optional)
  • Avocado (optional)
  • Green onions (optional)
  • Cilantro (optional)
  • Tortilla chips (optional)

Instructions

  • Brown the ground turkey in a skillet over medium-high heat until cooked through. Drain off any excess grease.
  • Heat olive oil in a skillet over medium heat. Add chopped onion and bell pepper and sauté until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  • In a crockpot, combine the browned ground turkey, sautéed vegetables, diced tomatoes, tomato paste, kidney beans, black beans, corn, chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper.
  • Stir well to combine all ingredients.
  • Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours, or until the chili has thickened and the flavors have melded.
  • Taste and adjust seasoning as needed.
  • Serve hot with your favorite toppings such as shredded cheese, sour cream, avocado, green onions, cilantro, and tortilla chips.
