  • 1.5 lbs boneless, skinless chicken breast
  • 1 lb of your favorite pasta shape
  • 1 cup raw, unsalted cashews
  • 1/4 cup nutritional yeast
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 cup low-sodium vegetable broth
  • Salt and Pepper to taste
  • 2 tablespoons plant-based butter (optional)
  • Fresh Parsley (optional) for garnish
  • 1 tablespoon tapioca starch/cornstarch (optional)

Instructions

  • Soak cashews in hot water for at least 30 minutes, or boil for 10-15 minutes for a quick soak.
  • Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
  • While pasta is cooking, cut chicken into bite-sized pieces and cook in a pan with olive oil until cooked through and lightly browned.
  • Drain cashews and add them to a high-speed blender along with vegetable broth, nutritional yeast, garlic, lemon juice, salt, and pepper.
  • Blend until completely smooth and creamy. If needed, add a tablespoon of tapioca starch mixed with two tablespoons of cold water for a thicker sauce and blend again until combined.
  • Pour the cashew cream sauce into the pan with the cooked chicken. Add plant-based butter if using.
  • Simmer for a few minutes, stirring constantly, until heated through.
  • Add the cooked pasta to the sauce and toss to coat. Add a little reserved pasta water if needed to achieve the desired consistency.
  • Garnish with fresh parsley and serve immediately.
