  • Begin by ensuring your unsalted butter is at perfect room temperature – soft enough to readily indent with your finger but not melted. In a large mixing bowl, using an electric mixer, cream together the softened butter and granulated sugar on medium-high speed for about 3-5 minutes, until the mixture is light, fluffy, and pale yellow. This creaming process is vital for incorporating air, which contributes to the cookies’ tender texture. Scrape down the sides of the bowl often to ensure everything is evenly combined.
  • Next, beat in the large eggs one at a time, mixing well after each addition, until fully incorporated. Stir in the pure vanilla extract, ensuring that sweet aroma begins to permeate the mixture.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix, as this can develop the gluten too much, resulting in tough cookies. The dough should be soft, slightly sticky, but manageable.
  • Divide the dough into two equal portions, flatten each into a disc, wrap tightly in plastic wrap, and refrigerate for at least 1 hour (or up to 2 days).
