Ingredients

  • Cream Cheese (full-fat block)
  • Granulated Sugar
  • Vanilla Extract
  • Lemon Zest (fresh)
  • Heavy Cream (cold)
  • Graham Crackers (crushed into fine crumbs)
  • Unsalted Butter (melted)
  • Powdered Sugar

Instructions

  • Line a 12-cup muffin tin with paper liners. Crush graham crackers into fine crumbs. In a medium bowl, combine melted unsalted butter, graham cracker crumbs, and 1 tablespoon of granulated sugar until it resembles wet sand. Divide the crumb mixture evenly among the 12 muffin cups, pressing it firmly into the bottom of each liner. Refrigerate while preparing the filling.
  • In a large mixing bowl, beat softened cream cheese on medium speed until completely smooth and creamy (2-3 minutes). Gradually add granulated sugar, beating until light and fluffy (about 2 minutes). Stir in vanilla extract and fresh lemon zest. In a separate, clean bowl, whip cold heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined. Spoon or pipe the cheesecake filling evenly over the chilled graham cracker crusts. Smooth the tops. Cover loosely with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to set.
  • In a chilled, large mixing bowl, combine very cold heavy cream, powdered sugar, and vanilla extract. Using an electric mixer on medium-high speed, beat until soft peaks form. Be careful not to over-whip.
  • Carefully remove each chilled and set cheesecake from its muffin liner. Dollop a generous amount of freshly made whipped topping onto the center of each cheesecake using an offset spatula or piping bag. Arrange on a serving platter. For festive decorating ideas, add fresh berries, a drizzle of lemon curd, pastel sprinkles, edible glitter, chocolate curls, tiny edible sugar flowers, or delicate chocolate ‘nests’ filled with mini chocolate eggs.
