Instructions

  • Combine the dried black eyed peas, water or broth, ham hock (if using), chopped onion, minced garlic, bay leaf, and dried thyme in a large pot.
  • Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 1 hour and 30 minutes, or until the black eyed peas are tender.
  • Check the peas frequently during the last 30 minutes of cooking to ensure they don’t overcook. Add more water or broth if the liquid is being absorbed too quickly.
  • Remove the ham hock (if using) and discard. Season the black eyed peas with salt and pepper to taste.
  • Serve hot, garnished with chopped green onions, hot sauce, or vinegar, if desired.
