  • 3 cups chicken broth
  • 1 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts

  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt and pepper
  • 1/4 cup chopped fresh parsley

Instructions

  • Rinse the rice under cold water until the water runs clear.
  • Toast the pecans or walnuts in a dry skillet over medium heat until fragrant, about 5 minutes. Watch carefully to avoid burning.
  • In a medium saucepan, melt the butter over medium heat. Add the onion and celery and sauté until softened, about 5 minutes.
  • Add the rinsed rice to the saucepan and stir to coat with the butter and vegetables.
  • Pour in the chicken broth, add the cinnamon, nutmeg, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  • Stir in the dried cranberries and toasted pecans or walnuts.
  • Fluff the rice with a fork and garnish with fresh parsley before serving.
