  • 0.5 teaspoon Vanilla Extract (for ganache)

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan (or line with parchment paper). In a large bowl, whisk together the granulated sugar, eggs, vegetable oil, and 1 teaspoon of vanilla extract until well combined and slightly frothy. In a separate medium bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until no streaks of flour remain (do not overmix). Pour the batter into your prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs, but not wet batter. Let the brownies cool completely in the pan before cutting them into 1-inch squares.
  • In a medium, heatproof bowl, place the semi-sweet chocolate chips. In a small saucepan over medium heat, gently warm 0.5 cup of heavy cream until it just begins to simmer around the edges (do not boil rapidly!). Immediately pour the hot cream over the chocolate chips. Let it sit undisturbed for 5 minutes. After 5 minutes, add the butter and 0.5 teaspoon vanilla extract, then whisk gently from the center outwards until the mixture is completely smooth, glossy, and beautifully uniform.   • In a large chilled bowl, combine 3 cups of heavy cream, 0.5 cup of powdered sugar, 1-2 teaspoons of mint extract (to taste), and a few drops of green food coloring. Beat with an electric mixer on medium-high speed until stiff peaks form. Be careful not to overbeat.
