Ingredients

  • 700 grams of full-fat cream cheese
  • 1 cup of fresh eggnog
  • 200 grams of granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1 tablespoon of pure vanilla extract
  • 2 cups of graham cracker crumbs

Instructions

  • Preheat your oven to 325°F (165°C).
  • In a large bowl, beat the cream cheese until smooth.
  • Add the sugar and continue to beat until well combined.
  • Mix in the eggs one at a time, beating slowly and scraping the bowl after each addition.
  • Add the eggnog, cinnamon, nutmeg, and vanilla extract, and mix until just combined.
  • Prepare the crust by combining graham cracker crumbs with melted butter and press into the bottom of a springform pan.
  • Pour the cheesecake batter into the crust.
  • Bake in a water bath for 1 hour, or until the edges are set and the center jiggles slightly.
  • Turn off the oven, crack the door, and allow the cheesecake to cool for at least 1 hour.
  • Chill in the refrigerator for at least 4 hours, preferably overnight, before serving.
