  • 500 grams of cream cheese, at room temperature
  • 1 cup of eggnog
  • 200 grams of granulated sugar
  • 3 large eggs
  • 1 tablespoon of vanilla extract
  • 1/2 teaspoon of ground nutmeg
  • 1/2 teaspoon of ground cinnamon
  • 200 grams of biscuit or graham cracker crumbs
  • 75 grams of melted butter

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, blend the cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing after each addition.
  • Pour in the eggnog and vanilla extract, followed by the spices. Mix until you achieve a smooth batter, without overmixing.
  • Prepare the crust by combining crushed biscuits or graham crackers with melted butter and press it into the base of a springform pan.
  • Pour the cheesecake batter over the prepared crust, smoothing the top with a spatula.
  • Bake in the preheated oven for about 50 minutes. The cheesecake should be set but still have a slight jiggle in the center.
  • Turn off the oven and crack the door open, allowing the cheesecake to cool gently to prevent cracks.
  • Chill in the refrigerator for at least 4 hours before serving.
