In a large bowl, combine the rolled oats, cinnamon, and flaxseed meal (if using).
In a separate bowl, mix together the pumpkin puree, peanut butter, and applesauce until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. The dough should be slightly sticky but not too wet.
Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out the dough to about ¼ inch thickness. Use holiday-themed cookie cutters to cut out fun shapes.
Place the cut-out shapes onto the prepared baking sheet. Bake for 15-20 minutes, or until the edges are golden brown.
Allow the baked treats to cool completely on a wire rack before decorating or storing.
Store the treats in an airtight container in the refrigerator for up to one week, or in the freezer for up to three months.
