  • ½ cup natural peanut butter (xylitol-free!)
  • ¼ cup unsweetened applesauce
  • 1 teaspoon ground cinnamon
  • 1 tablespoon flaxseed meal (optional, for added nutrients)
  • Plain Yogurt or cream cheese (for Icing)
  • Honey or Mashed Banana (For Icing)
  • Beet Juice (for pink coloring – Icing)
  • Spinach Juice (for green coloring – Icing)
  • Turmeric Powder (for yellow coloring – Icing)
  • Instructions

  • In a large bowl, combine the rolled oats, cinnamon, and flaxseed meal (if using).
  • In a separate bowl, mix together the pumpkin puree, peanut butter, and applesauce until well combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. The dough should be slightly sticky but not too wet.
  • Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the dough to about ¼ inch thickness. Use holiday-themed cookie cutters to cut out fun shapes.
  • Place the cut-out shapes onto the prepared baking sheet. Bake for 15-20 minutes, or until the edges are golden brown.
  • Allow the baked treats to cool completely on a wire rack before decorating or storing.
  • Store the treats in an airtight container in the refrigerator for up to one week, or in the freezer for up to three months.
