  • 2 ripe avocados
  • 1/4 cup red onion, finely diced
  • 1 jalapeño, finely minced (seeds removed for less heat)
  • 1/2 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  • In a medium bowl, combine the lime zest, lime juice (about 1/4 cup), finely minced fresh cilantro, minced garlic, olive oil, chili powder, cumin, smoked paprika, salt, black pepper, onion powder, dried oregano, and optional cayenne pepper. Whisk until well combined.
  • Trim any excess fat from the chicken breasts. If thick, gently pound to an even 3/4-inch thickness. Place chicken in a large resealable bag or shallow dish and pour marinade over it, ensuring each piece is thoroughly coated. Massage the marinade into the chicken. Refrigerate for at least 30 minutes, ideally 2-4 hours, or overnight for maximum flavor.

Taste and adjust seasoning as needed.
  • Slice the rested chicken breasts against the grain into thick pieces. Arrange on a serving platter or individual plates. Generously spoon dollops of the creamy avocado topping over the warm chicken. Garnish with a final sprinkle of fresh cilantro leaves and extra lime wedges. Serve immediately.
