  • 1 cup granulated sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 cups powdered sugar
  • 3 tablespoons meringue powder
  • Gel food coloring (green, white, brown)
  • Green sprinkles or sanding sugar
  • Miniature marshmallows or white chocolate
  • Chocolate graham crackers

Instructions

  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and chill for at least 30 minutes (or overnight).
  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • On a lightly floured surface, roll out one disc of dough to about 1/4 inch thickness.
  • Use a football stadium shaped cookie cutter (or template) to cut out cookies. Re-roll scraps as needed.
  • Place cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden.
  • Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • While the cookies are cooling, prepare the royal icing. In a large bowl, whisk together the powdered sugar and meringue powder.
  • Gradually add water, 1 tablespoon at a time, until the icing reaches piping consistency (thick enough to hold its shape but thin enough to flow smoothly).
  • Divide the icing into separate bowls and tint with gel food coloring: green for the grass, white for the field lines and seating, and brown to adhere graham cracker crumbs.
  • Transfer the icing to piping bags fitted with small round tips.
  • Outline and flood the cookies with green icing to create the football field. Immediately sprinkle with green sprinkles or sanding sugar.
  • Pipe white icing to create the field lines and seating areas. Attach miniature marshmallows or pieces of white chocolate to the seating areas.
  • Grind chocolate graham crackers into fine crumbs. Use a dab of brown tinted icing to attach the crumbs around the base of the stadium.
  • Let the royal icing dry completely (at least 6-8 hours) before handling or storing the cookies.
