  • 3 large yellow onions, thinly sliced
  • 6 tablespoons unsalted butter, divided

  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  • Place the potatoes in a pot and cover with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain well.
  • While the potatoes are cooking, melt 3 tablespoons of butter and olive oil in a large skillet over medium-low heat. Add the sliced onions and cook, stirring occasionally at first, then more frequently as they start to brown, until they are deeply caramelized, about 45 minutes to 1 hour. Add beef broth during the last 5-10 minutes of caramelizing.
  • Warm the heavy cream in a saucepan over low heat. Add fresh thyme sprigs to infuse the cream with flavor. Remove the thyme before using.
  • Return the drained potatoes to the pot and mash with the remaining 3 tablespoons of butter. Use a potato ricer or food mill for the smoothest texture.
  • Gradually add the warm heavy cream to the mashed potatoes, stirring until smooth and creamy. Be careful not to overmix.
  • Stir in the caramelized onions and season generously with salt and pepper to taste.
  • If desired, stir in the grated Gruyere cheese. Serve hot, garnished with fresh thyme sprigs.
