Instructions

  • In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  • In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the molasses, egg, and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the crystallized ginger, if using.
  • Cover the dough and chill for at least 2 hours, or overnight.
  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • Roll the dough into 1-inch balls and roll them in turbinado sugar.
  • Place the cookies on the prepared baking sheets, about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden brown.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
