  • 1 cup (226 grams) unsalted butter
  • 3 large eggs
  • 2 teaspoons pure vanilla extract
  • 4 ounces (113 grams) dark chocolate, chopped
  • 1.5 cups (200 grams) fresh blueberries
  • 1 tablespoon vegetable oil
  • 2 cups (240 grams) powdered sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons milk
  • 0.5 teaspoon pure vanilla extract
  • Fresh blueberries (for garnish)

Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides. Lightly grease the parchment.
  • In a large heatproof bowl, combine the unsalted butter and chopped dark chocolate. Melt over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Remove from heat and let cool slightly.
  • In a separate bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt until well combined.
  • Once the chocolate mixture has cooled, whisk in the granulated sugar and light brown sugar until fully incorporated.
  • Beat in the large eggs one at a time, ensuring each is fully incorporated. Stir in 2 teaspoons of pure vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing by hand with a spatula until just combined. Do not overmix.
  • Gently fold in 1.5 cups of fresh blueberries until evenly distributed.
  • Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Do not overbake.
  • Let the brownies cool completely in the pan on a wire rack before glazing.
  • In a medium bowl, whisk together the powdered sugar, fresh lemon juice, and milk until smooth. If too thick, add more milk (¼ teaspoon at a time). If too thin, whisk in more powdered sugar (1-2 tablespoons). Stir in 0.5 teaspoon pure vanilla extract.
  • Once brownies are completely cool, pour the prepared glaze evenly over them. Spread to the edges with an offset spatula. While the glaze is still wet, arrange fresh blueberries on top for garnish.
  • Let the glazed brownies sit at room temperature for at least 30 minutes, or until the glaze has fully set. Use the parchment paper overhangs to lift the brownies out of the pan. Slice into desired squares using a sharp, warm knife.
