  • 1.5 lbs Chicken Breasts, cut into 1-inch pieces
  • 1 cup Pickle Juice
  • 1/2 cup Milk
  • 1 large Egg
  • 1 cup Gluten-Free All-Purpose Flour Blend
  • 1/2 cup Cornstarch
  • 2 tablespoons Powdered Sugar
  • 2 teaspoons Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Poultry Seasoning
  • Vegetable oil for frying

Instructions

  • Marinate the chicken pieces in pickle juice for at least 30 minutes, or preferably overnight.
  • In a bowl, whisk together milk and egg.
  • In another bowl, combine gluten-free flour, cornstarch, powdered sugar, salt, pepper, paprika, garlic powder, onion powder, and poultry seasoning.
  • Dredge the marinated chicken pieces in the flour mixture, then dip them in the milk and egg mixture, and then dredge them in the flour mixture again for a double coating.
  • Heat oil in a deep fryer or large pot to 350°F (175°C).
  • Fry the chicken nuggets in batches for 5-7 minutes, or until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C).
  • Place the fried nuggets on a wire rack to drain excess oil.
  • Serve immediately with your favorite dipping sauces.
