  • 1.5 lbs cooked chicken (shredded)
  • 12 small corn tortillas or gluten-free tortillas designed for rolling
  • 1 cup cheddar cheese, Monterey Jack cheese, or a Mexican blend
  • 2 tablespoons taco seasoning
  • ½ cup finely chopped onion
  • 4 oz can of diced green chiles
  • 2 tablespoons olive oil
  • Sour cream (optional topping)
  • Guacamole (optional topping)
  • Salsa (optional topping)
  • Cilantro (optional topping)
  • Lime wedges (optional topping)

Instructions

  • Preheat oven to 400°F (200°C) or prepare air fryer to 375°F (190°C).
  • In a bowl, combine shredded chicken, shredded cheese, taco seasoning, chopped onion, and diced green chiles. Mix well.
  • Warm the tortillas in the microwave (covered with a damp paper towel for about 30 seconds) or on a dry skillet until pliable.
  • Place about 2-3 tablespoons of the chicken mixture onto each tortilla.
  • Roll the tortillas tightly and secure the seam with a toothpick, if needed.
  • Brush the taquitos with olive oil or spray with cooking spray.
  • Bake for 15-20 minutes or air fry for 10-15 minutes, or until golden brown and crispy. If pan-frying, heat olive oil in a skillet over medium heat and cook for 3-4 minutes per side, or until golden brown.
  • Remove toothpicks, if used, and serve immediately with your favorite dipping sauces and toppings.
