Ingredients

  • 3 cups Gluten-Free All-Purpose Flour Blend (with xanthan gum)
  • 1/4 cup Tapioca Starch
  • 1/4 cup Granulated Sugar
  • 2 1/4 teaspoons Instant Yeast
  • 1/2 teaspoon Salt
  • 1 cup Milk (Dairy or Non-Dairy), lukewarm
  • 2 large Eggs
  • 1/4 cup Melted Butter, unsalted
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Brown Sugar, packed
  • 2 tablespoons Ground Cinnamon
  • 4 ounces Cream Cheese, softened
  • 2 cups Powdered Sugar
  • Optional: Additional milk or cream for frosting consistency

Instructions

  • In a large bowl, combine the gluten-free flour, tapioca starch, granulated sugar, instant yeast, and salt.
  • Add the lukewarm milk, eggs, melted butter, and vanilla extract to the dry ingredients. Mix until just combined. Be careful not to overmix.
  • If using a stand mixer, knead the dough for 5 minutes. If kneading by hand, knead on a lightly floured surface for 8-10 minutes.
  • Place the dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  • While the dough is rising, prepare the filling by combining the brown sugar and cinnamon in a small bowl.
  • Once the dough has risen, roll it out on a lightly floured surface into a rectangle approximately 12×16 inches.
  • Spread the melted butter evenly over the dough, then sprinkle with the brown sugar and cinnamon mixture.
  • Tightly roll the dough into a log, starting from the long side. Use a sharp knife or dental floss to slice the log into 8-10 rolls.
  • Place the rolls in a greased 9×13 inch baking dish. Cover and let rise for another 30 minutes.
  • Preheat oven to 350°F (175°C). Bake for 20-25 minutes, or until golden brown and the center is set.
  • While the rolls are baking, prepare the frosting by beating the softened cream cheese and powdered sugar together until smooth. Add a tablespoon of milk at a time until the desired consistency is reached.
  • Once the rolls are out of the oven, let them cool slightly before frosting. Serve warm and enjoy!
