  • 8 ounces dairy-free cream cheese, softened
  • 1 cup dairy-free sour cream
  • 1 (8 ounce) package gluten-free cornbread mix
  • 2 large eggs
  • 1/2 cup melted vegan butter
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  • In a large bowl, combine creamed corn, thawed frozen corn, dairy-free cream cheese, dairy-free sour cream, gluten-free cornbread mix, eggs, melted vegan butter, sugar, salt, and pepper.
  • Mix until just combined. Be careful not to overmix.
  • Pour the batter into the prepared baking dish.
