  • 3 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1/4 cup tapioca starch (or tapioca flour)
  • 1/4 cup potato starch
  • 2 tablespoons granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 cup milk (or dairy-free alternative)
  • 1/2 cup water
  • 2 large eggs
  • 1/4 cup butter (or dairy-free alternative), melted
  • 1 teaspoon apple cider vinegar

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan.
  • In a large bowl, combine gluten-free flour blend, tapioca starch, potato starch, sugar, yeast, and salt.
  • In a separate bowl, whisk together milk, water, eggs, melted butter, and apple cider vinegar.
  • Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • Cover the bowl and let the dough rise in a warm place for 30-45 minutes, or until doubled in size.
  • Lightly flour your hands and work surface. Gently shape the dough into 12 equal-sized rolls.
  • Place the rolls in the prepared baking pan, leaving a little space between each roll.
  • Cover the pan and let the rolls rise for another 15-20 minutes.
  • Bake for 20-25 minutes, or until golden brown.
  • Brush the warm rolls with melted butter.
  • Let cool slightly before serving.
